Baharat is a spice mixture eaten across the Middle East and is a critical building block for most Iraqi Jewish recipes. This spice blend differs from country to country, and the Iraqi baharat has various versions, with ingredients ranging from seven to 16 different spices—usually including cardamom, cinnamon, cloves, coriander, cumin, nutmeg, paprika, and black pepper. The blend is different from town to town and can differ from family to family.
